As a newly diagnosed man with “silly-ac” – the holidays certainly were more challenging. Luckily, I have a supportive family who is willing to pick up alternatives and even join me by “playing” along with a “GF” diet.

We (I and others) had chili, celery, rice, fruits/veggies, GF baked chicken, a breakfast stir-fry type mix made by my brother-in-law that was quite delicious. Avocados, GF toast, and a variety of other items scanned with my GF app.

Of course, as a newly diagnosed person on a gluten-free diet who hasn’t quite made the connection between gluten & issues I did “cheat” a bit especially when it comes to a certain cookie my mom makes, I only had 1 (for those of you keeping score).

risottoTonight, I baked some chicken. I picked up some GF risotto (amen for packaging that spells out gluten free), but I didn’t have enough milk, so I used other rice.

My sister got me some KIND bars which are a delicious snack to have at my desk.

My mom sent me home with some GF stuff she came across, so that’s good to have go-to items available.

I’ll have a follow-up doctor appointment early in January to get additional details on the extensiveness of my “silly-ac” – but until then, I’ll take it easy.

I wish I had a better idea how exactly my body reacts to it. Even after reading through the Celiac Book, I’m still unsure, will be curious to hear from others how they react to it.

Today’s Lunch & Dinner

Lunch:
I headed to Panera Bread for lunch today as I wanted to experience going to a place that I knew had gluten-free options and be able to keep my choices gluten-free.

Panera’s website has a nice list of their gluten-free options.

I selected the Caesar Salad with Chicken, minus the croutons.  It was pricey for my taste considering it was, well, a salad – but I’ll admit it was most delicious & filling. I even got an apple as my side instead of chips & a baguette.

Snacks:
I didn’t have my usual snacks of Cheez-Its, granola bars, or Rice Krispie treats. That was quite challenging to avoid especially during my normal, “snack-time” when my stomach says (in no uncertain terms), and in a deep voice I may add, “feed me now!

Dinner:
On my way home from work, I formulated that I’d make a “hole in the wall diner-style” open-faced roast beef sandwich. I had gluten-free bread, I topped it with roast & potatoes I had previously made in my crock pot, & topped it off with gluten-free gravy. I’m not one to take pictures of what I’m eating (sorry, not sorry) – it certainly tasted better than it looked.
