Just a slice or two

Today at work, my department had pizza delivered. An email was sent announcing the arrival of the pizza and where we could find it – of course, I thought, we should just follow the distinctive smell of fresh-baked pizza. So, myself like many others found our way (single file like school children) to the conference room where a handful of boxes of ‘pies’ were spread out.

Without thinking, I grabbed a plate and a few large slices that caught my eye.

Sure the choice wasn’t wise and I thought I might feel sick later. And was reminded of that fact by a co-worker. I had considered just eating the toppings since I’m not a huge fan of crust anyway…ย  which I did for the most part. After all, my last pizza was at Old Chicago – which was gluten-free, and that crust wasn’t great. Thankfully, I didn’t feel ill later. I was partly surprised – but mostly thankful as my afternoon was spent out of the office.

Moral of the story? Ummm… nothing really. Sorry. (You didn’t come to this blog for life-changing advice & insight, did you?)

I had pizza today, it was good, but still not my best decision. I will try to be wise next time some free pizza is available! ๐Ÿ™‚

However, whatever I’m doing is keeping my sugar-levels in range longer than I’ve experienced as long as I’ve had the pump & sensor. Even with having gone back to some gluten when the endoscopy was on the schedule.

Random update

I ended up canceling my endoscopy for later this month. There were a few influencing factors on this decision, but it really comes down to timing.

I do still plan to do it – as I want to know for 100% certainty where I’m at in the spectrum of celiac/silly-ac. This means, in the meantime, I can go back to my (over-priced) gluten-free diet.

This week feels a bit like a ‘cheat’ week, even though I’ve not totally been filling up with gluten.

Taking a commercial break

Even with my doctor appointment earlier this week, I’m still learning all I can about celiac disease and being on a gluten-free diet so regardless of the outcome of the endoscopy – I can continue on consuming less gluten in my diet.

I’ve been adding a bit of gluten back into my diet right now so the endoscopy test results are more conclusive and if I can find a pattern in the meantime.

So, I’m not entirely sure what aspects of my “silly-ac” I can share on this blog in the meantime.

I have some blogs drafted some articles I’ve found on the Internet related to celiac disease and gluten-free dieting I’ll post in the resources area of this blog for me to refer to and for continued learning for anyone visiting.

My Gastroenterology Appointment

I had a good visit at a gastroenterology center to visit with a doctor about my possible and likely celiac disease.

Based on the blood work from a few weeks back which the doctor reviewed, he is sure I have celiac as there is only a slight (5%) chance of error on the particular blood test that was ordered. However, to be sure (according to medical textbooks & whatnot), I have an endoscopy scheduled for later this month.

However, the “trick” is this; I’ve been gluten-free (to the best of my knowledge) for 3 weeks and the endoscopy isn’t for a bit which means the area where they would take a sample will be gluten-free for almost 6 weeks which means it is possible it won’t show any confirming results.

Side note: I have lost 5lbs since my doctor appointment almost a month ago where the drew the initial blood work to see if it would red flag the possibility of “silly-ac”… there is that plus.

So, under theย “doctor’s orders” – I need to have some gluten (1) to see if I can connect eating gluten with specific effects and (2) so at the time they do the endoscopy, it would give a better reading.

Tonight, I had a Big Mac. Because as I like to say, “why not?”

Blogger’s full disclaimer: I had the full intention of grabbing something over lunch; eating half and having leftovers for dinner (can you see where this is going?). The chicken salad I ordered was too good & I ate it all. After all, salad doesn’t exactly make great leftovers. Hence the idea behind, “fresh salad”- ya know? I wasn’t sure what I was going to order going in, so there is that fact.

Desk Snack:

Dinner:
I baked some Gorton’s grilled tilapia (to my cat’s delight) and added some mixed veggies and then 2 halo oranges.

Late night snack:
Not sure what I might munch on tonight. But just so you aren’t on the edge of your seat wondering & waiting, don’t worry – it won’t be anything that exciting.

Spaghetti feed

I picked up Prego three cheese spaghetti sauce from the store after forgetting it during my last trip. I browned hamburger and let the sauce, some mozzarella cheese, and beef sit together in my fridge while I took a nap.

After my Sunday nap, I put everything in a pot on the stove, added some sliced mushrooms and Parmesan cheese because… well, cheese makes everything better.

I boiled a pot for the American Beauty Gluten Free thin spaghetti and decided to toast up some gluten-free bread for garlic bread.

Once the pasta was ready to go, I tried a bit to make sure it was cooked (instead of throwing it onto some poor random innocent wall) and to hopefully see if I could tell it tasted any different from ‘normal’ (less expensive gluten-filled) spaghetti. To my delight, it tasted fine to me. I grabbed a big bowl & put everything together.
