Gluten Free Snickerdoodle

My sister & brother-in-law brought me back a gluten-free snickerdoodle cookie from Mary’s Mountain Cookies while in Colorado.

I finally got a chance to open it up & take a bite. I must say, it is most delicious. Can’t even tell it is gluten-free which is good because the gluten-free cookies I’ve had are kind of bland.

I wonder what other cookies Mary has made that are gluten-free.

Taco Tuesday

Work had a taco Tuesday today and had a buffet set out in our kitchen.

There were flour tortilla and corn shells. The other ingredients to stuff the taco shell didn’t look alarming – the taco was delicious, I was hoping there would be enough for a 2nd helping, but alas, the buffet table was empty.

Naked Chicken… fingers


I was up in Omaha today to see my ‘little brother’ Xander (via Big Brothers). He is a fan of going to Cane’s & so off we went.

Cane’s is known for their breaded chicken fingers. Emphasis on breaded, so I wasn’t quite sure what I was going to order. I asked if I can get the chicken fingers without the breading. The cashier didn’t miss a beat & said, “Sure, naked chicken fingers? That will take a bit longer” & after I ordered, he called it back & got it going. Later, when he came to take my tray he asked how they were. They were actually pretty good. It was still tasty chicken without the breading. I had to (sadly) give my Texas Toast to my little brother to eat, but he gave me his Cane’s sauce which I like – but of course, now that I think about it being sauce, that may have been a bad choice. I haven’t felt any ramifications of that decision – yet.

Moral of the story: Likely there is an alternative choice at restaurants by simply asking.

Lunch at church

Today after church, there was a new member meeting. This meeting included lunch: deli sandwiches, chips, cookies, & water.

I went through the line like any regular “normal” person and picked out 2 sandwiches, put them on my plate. I spotted the bag of Doritos and shook some out onto my plate. I saw the plate of cookies, I licked my lips and did my best to ‘look away’ from them as I picked up a cup of water. The childhood version of me probably wouldn’t have been able to resist a chocolate chip cookie or 2.

At the table, I simply ate the ‘center’ of my sandwiches and called it good. No one (that I noticed) looked at me with a curious eye.

Sure, I would have liked to have the entire sandwich or the plate of cookies, but this was another battle I won over the gluten.

Work lunch

Work catered in lunch for a meeting today. When I went to order, I was able to order and make sure everything was gluten-free. A rice bowl is a good go-to, plus it is pretty yummy.

I did wonder about ordering in for lunch while at work whether or not there would be suitable options for me.

Will see happens during the next order.

Cookout


My bible study group had a cookout tonight. I brought mixed fruit. Typically, when I’d go to cookouts, I’d try a bit of everything, but this round I had to be extra careful.

It is easy to skip the hamburger and hot dog buns, but not fully knowing ingredients in other items and of course, the desserts that people brought made it tricky. It was tough, my habit and hand wanted to reach for something I shouldn’t have more than once.

But in the end, I went ‘bun-less‘ and proud I didn’t cave into desserts or as I say, a dessert didn’t “accidentally” fall onto my plate.

Wedding Cake

A co-worker got married over the weekend. He brought leftover wedding cake that was in the form of cupcakes. Delicious. Wedding. Cake. Or so I was told.

I was tempted. Sure. I walked by the big box a few times.

Alas, I refrained from grabbing 1 or 2 to ‘test’ out.

Bake Sale

My church had a bake sale the kids put on to raise money for Bethel, India. I had brought cash to donate as I didn’t think buying anything at a bake sale would be a good idea for someone with ‘silly-ac’. After I donated, one of the kids told me they had some gluten-free baked goods, oh well, I didn’t need baked goods at the time, but it is nice to know they had some alternative options.
