Snap Crackle & Pop

Today, I picked up some Annie’s Organic Crispy Snack Bars (on clearance even) as I’m a big fan of rice krispie bars and even better if I can find gluten-free ones.

Once in my car, I opened a box to try one in case I “needed” to go back to the store to buy up the rest of the boxes in the clearance bin.

It was good, I’ll enjoy the other 4 bars, but not sure I’d buy more. They are extra gooey which sounds good in theory – but don’t taste as original as I was hoping. Alas, it is good to know there are alternatives out there by companies such as Annie’s.

Church potluck

My church had a potluck dinner for the members tonight. There were tables set up for about 150 of us – all were welcomed to bring entrees, sides, & desserts.

I was scheduled to bring an entree – I even searched Google for some ideas, I found some great ideas including: “62 Heavenly Church Potluck Recipes” – I had to laugh at some of the recipe titles especially those with overuse of superlatives. After all, with all the recipes one can find on the internet, these titles need to differentiate themselves. Somehow.

I was thinking of going with the classic, ‘fried chicken’ (*cough* from the store *cough*) even though this was an indoor thing and not exactly a picnic. Even fried chicken was in a list of ideas. After all, someone actually brought pizza and we ran out of main course options, so someone went to the nearest BK for a few dozen Whoppers. My friend said, “Something to be said about seeing a pastor in a full suit walking around & eating a Whopper.” True story.

I ended up bringing fixings for a salad with a handful of topping options and dressings. I thought, at least I could eat this as well as others that need to have gluten-free foods. I have seen many have the gluten-free crackers during communion, so I know I’m not the only one there that needs to be specific about what they eat.

As far as I know, everything I ate was gluten-free. Going ‘bun-less’ is a pretty easy thing to do. The only down-side is, not knowing how everything was cooked, or cooked with, you can not be 100% sure.

After church lunch

After church, my friend & I went to Honest Abe’s for lunch.

I expected to order a burger and find a fork &  knife after I set the bun aside. The online menu noted a gluten-free bun option. I didn’t see one at the menu at the actual restaurant. But, I haven’t found a gluten-free bun I liked at a restaurant, so it was easy to skip.

The burger was good with the cheese, mushroom, & sauce.

It is nice to be able to go out to eat and no worry so much about finding something that fits my diet. Sure, I didn’t 100% know what is in the sauce, so I’ll have to remember to ask next time.

Shiver me timbers

Today was my Pop’s birthday. He loves Popeye’s, so we met there for dinner along with my mom & aunt.

My mom called ahead to ask if they do chicken without the breading. AKA, “naked chicken” & sure enough they do – so she ordered some for her and me.

They were delicious, a bit too seasoned, but still beat having to tear off the yummy crispy skin. I also missed out on the biscuit.

Reminds me of the time my ‘little brother’ & I went to Cane’s & I ordered the naked chicken.

Lazlo’s

I met up with a couple from my church tonight at Lazlo’s. I had grilled chicken – I skipped the bread & didn’t get gravy on the mashed potatoes. I skipped the bread appetizers and any dessert. It was yummy and I felt good to make good choices & have a place that has a wide variety of gluten-free menu options.
